A Bit About Me
Growing up in Niagara on the Lake, I began my working career young and entered the restaurant world as a dish washer. Hard to believe, but even back then restaurants struggled to find employees. I found myself with an opportunity to begin cooking at the age of 15, when my head chef asked me put on the chef whites and hop on the line with him. From that day, I was cooking! Over the my teenage years I had the pleasure of working in some insanely busy and professional environments, apprenticing at a 4 diamond hotel called The Oban Inn. Here, I fine tuned my culinary education while attending culinary school at the Canadian Food and Wine Institute. I always loved food, but it was during this time I really began to fall in love with flavours and understanding ingredients, as well as service. After earning my red seal certification at the age of 21, I received another opportunity to help open a restaurant here in Revelstoke. I managed Chubby Funsters Kitchen and Cocktails from 2014 - 2023, and now manage my own small business, and BCI Catering (Big Chubby Idiot).
I believe in simplicity, letting the ingredients work together for a greater good. I love being creative and making odd flavour combinations. I want my guests to relax, indulge, and be prepared to try something different!
